Recipe Developed by Imtiyaaz Hart
Serves 4
Ingredients
Camembert cheese
1 Cup seedless red grapes
1 Tbsp balsamic vinegar
1 Tsp olive oil
3 Sprigs thyme
1 Tsp honey
Few pieces of crispy pancetta or bacon
½ Cup Toasted Cashews
¼ Cup Crispy Sage leaves
5 Mini tortilla wraps cut into quarters/triangles
Salt and pepper
Method
Preheat your oven to 200°C.
In a small bowl, combine grapes, balsamic vinegar, olive oil, salt and pepper.
Arrange grapes on a foil lined baking tray and bake for 20 to 25 minutes.
The grapes should be juicy and slightly wilted.
Meanwhile, take the camembert out of its plastic packaging and place back in its wooden container. Slice a cross hatch pattern along the top rind, and sprinkle with cashews and honey. When the oven timer reaches 10 minutes, place the camembert on an oven-safe dish alongside the roasted grapes.
Let both finish in the oven. Once the timer goes off, take both items out of the oven and carefully transfer the camembert to a serving dish.
Top the cheese with the balsamic grapes and garnish with fresh thyme, crispy sage leaves and crispy pancetta or bacon nits.
Serve immediately with crispy tortilla triangles & enjoy!
