Who doesn’t love breakfast? This quick and easy recipe will impress your guests as you probably have everything you need in your pantry already.

Serves 1
Ingredients
1 Tin of canned corned beef 300g
2 Fresh medium sized eggs
2 Tbsp olive oil
1 Medium finely chopped onion
Pinch of crushed garlic
1 Tbsp tomato paste
1 Tbsp of honey
Method
In a large pan add olive oil and once heated add your finely chopped onions and pinch of garlic. Once the onion is brown add 1 Tbsp tomato paste and 1 Tbsp of honey then add your canned beef until brownish and flavours have come together.
To poach the eggs
Crack your egg into a bowl.
Bring a pan of water filled with at least 5cm of water to a simmer.
Carefully tip the egg into the pan.
Cook for 2 minutes then turn off the heat and leave the pan for 8-10 minutes.
Lift the eggs out with a slotted spoon and drain on kitchen paper towel.
Serve with fresh bread.
